Baked Zucchini Taquitos w/ Spicy Avo Sauce

We are making some grated, spiced zucchini like we did for the mulitas a few weeks ago. The hope is to get it tender and small enough, that we get more veggies into the kids without complaint. You could sub in some tiny, diced fajita veggies, or just skip them all together if you’d rather. Taquitos cannot be overfilled, in order to stay together, so don’t get zealous about the filling. Less is more here!
All tortillas are different. If using corn, you want to use a brand that is thin and pliable. I like the Banderita brand, available in southern CA, and am sure there are other brands that do the same. The Trader Joe's corn tortillas are thick, so don't skip the steam/microwave step.
We are revisiting the avocado sauce from our archives. I’ve replaced half of an avocado with ¼ cup of soaked cashews (pictured) to get it even creamier.
