So good! We inhaled these. They were an after school snack and dessert with scoop of ice cream for me or a passable breakfast treat. Simple and made of pantry staples.

For our egg free friends, the one included here certainly helps bind, but I also tried them without, and I felt like the starchy bananas and flax hold them together just fine, just keep them on the smaller side. These were previously written with maple syrup, but they were just so flat, we use brown sugar now to get some height.
