Zucchini Orzo Salad

I made this for my sister's baby shower last weekend and it struck me as the easy summer meal you all are asking for. A simple dressing. No oven time (though roasting instead of grilling the zucchini is an option is preferred!). Leftovers stand up. We use the olive tapenade from Trader Joes which I find oily enough to help dress the orzo but add a little oil if your tapenade is on the dry side.
The amount written should feed four as a meal. Double it if you like leftovers or plan to share with others.
Ricotta salata is a semi-firm Italian cheese, but can sometimes be difficult to find. A feta or parm would be fine as well!
