Za’atar Chicken Milanese w/ Winter Salad

Chicken Schnitzel, chicken parm, Milanese many households have their own version. When dinner gets boring and you have semi-picky eaters, sometimes the most foolproof way to win them over with something “new” is to take a dish that's familiar and switch it up by taking inspiration from another food way.

Here we’re doing a Mediterranean/middle eastern twist on crispy chicken with Za'atar and a feta drizzle that you can use on just about anything. It’ll come together in less than 40 minutes and its GF friendly for those of you who need that! If you do not, feel free to substitute in almond flour and starch in place of the AP flour and panko breadcrumbs!

I wrote in the ingredients for omnivorous eaters, if you are gluten free, make a dry mixture of 1 cup almond flour and ¼ cup arrowroot, cornstarch OR tapioca starch and then the same sesame, seasonings etc. It won’t be quite as crispy but the flavor will be great. Or, you can do ½ cup of GF 1:1/all purpose flour, and 1 cup of GF panko/rice crumbs if that is what you stock.
