Wild rice can take forever to cook, but I’ve found cooking it like pasta does the trick. I suggest cooking the rice the day in advance before assembly. We love the Umami Cashew Dressing here, but any drizzle from the archives will do.
Carrots can be swapped for whatever root veg you have on hand. The number of eggs can be adjusted depending on how many you’d like per bowl.
