Vegetarian Beetballs

I pulled this recipe from the LA Times food section, which honestly never really inspires me, but I’ve been up for a new veggie ball. You do taste the beets, so if you hate that flavor, you were warned. If you need them to be gluten free, try quick cooking oats, “rice crumbs” from Trader Joes or two pieces of gf toast, blitzed up in the processor in place of the panko. Large health food stores will have more packaged GF breadcrumbs options as well.
They can hold together without the egg, but will be slightly more delicate.
