These are a labor of love, but goodness are they worth it. Chop all the veg the night before and shake up your sauce, and it will come together quicker than expected.
The sealing/pleating process of making the potstickers is the most time-consuming part. A few tips: don’t use too much water to seal the dough. Don’t overfill the dumpling. If it isn’t perfect, the world will keep on moving. These can be cathartic to make, or a family affair if you have the patience to involve your kiddos. Don’t be intimidated, these are simple once you get the hang of it.
