Vegetable Broth

We’re heading into soup season so I wanted to have a broth recipe on here to reference. This is a project item for me, not a weekly occurrence to be honest.

I started with a BA recipe (of course). If you are not vegetarian, and saved the turkey carcass for broth, add that in to the roasting step. If you do this, add more water and double the simmering time.

Like their recipe, we’re going to use a bit of miso paste for depth of flavor. Their recipe calls for kombu and dried mushrooms but I’m going to stick with easier to find ingredients, but HERE is the original. If you can find those items, go for it, but I want these recipes to be accessible for more people, so am writing the recipe without.

If you have other vegetable or herb ends, feel free to add them here. I love a hint of fennel if you have one around.
