Vegan Carrot Cake Scones

There was some chit chat in our Facebook group about breakfasts that don’t include eggs or dairy, so I’ve been trying some different things. I try to avoid those items are well, and I’m honestly getting a little burnt on avocado toast with two chicken sausage so here we are.

I think this base could work with any flavor combination. Maybe berries and cardamom or chocolate and chopped cherries as those come into season.

I am writing them in as gluten free for those folks, but you can make an easy swap in of 1 3/4 cups all-purpose flour as a replacement for the almond and AP flour blend. You can also use an egg in place of the flax egg if that suits you. Starches do absorb moisture quickly, so enjoy these within a day or consider freezing them and thaw as needed.
