Thai Veggie Rollups

These Thai Veggie Rollups are no-cook if you don’t add a protein, pack well for a picnic, and hold up well in the fridge. They were developed with back-to-school and back-to-work weeks and are grab-and-go friendly. If you have kiddos, and they would eat something with pickled veg in it, you can swap sunflower butter for almond butter to make it school-friendly. You will likely need to thin out the sauce a bit more with an extra splash or vinegar or warm water as almond butter is thinner.

You can add in rotisserie chicken for some protein but are plenty filling without. Tofu would also be great here.
