Thai Fried Rice

This will come together quickly if you can do some chopping ahead of time. I strongly suggest getting all of your components in order and veggies chopped ahead of time so that you don’t have to pause the cooking process to prep the next ingredient. Day old rice is incredibly helpful for texture so we can get a crispier outside.

The chili keeps this spicy. You can sub in a serrano if you want the color and less heat. Also, adding the chili in with the herbs instead of with the veggies will cut down on the spice as it doesn't have the time to develop.

This is a veggie version, but you can certainly add chicken. I would cook it in a similar sauce, like the one listed below, set it aside, and add it back in when you add the rice. You will need a big skillet to fit it all, but it could work.

You can be versatile with your veg. Shallot instead of onion? Cabbage instead of Brussels? Peas instead of carrots? It will all work here. We don’t want to mimic our Pineapple Fried Rice exactly but mango would be fun here too.
