Tequila Steak Fajitas w/ Chipotle Muhummara

The steak should marinate for at least an hour to really get in there and tenderize. If you can, do this the morning of, or night before serving and dinner will come together quickly. If you don’t eat red meat, you can use the same marinade on boneless skinless chicken breasts and thighs.

If you are a veg family, skip the steak and add 4 portobello caps to the fajita veggies, double the spices and oil, and roast on two sheet pans.

If you don’t like much heat, remove the seeds from the chipotles. And one last thing! You’re only using a bit of tequila here, so make those margs from the Thanksgiving menu to go alongside these! If you don’t stock tequila, use beer or just eliminate the alcohol, no big deal.
