Last year's strata was a hit because you can assemble the entire thing the night before and pop it in the oven on a holiday morning, with the work already done. In this years’ egg bake, since we aren’t doing the bread part, I prefer to keep the veggies and eggs prepared, but separate. Just combine and bake in the morning. It still has most of the make-ahead components!
If you DO want a strata vs. frittata, increase the size of your baking dish, add 2 cups of toasted bread, a glug of heavy cream and a pinch more salt and pepper to the egg mixture.
For kids, get the greens, leeks and potatoes in smaller pieces than shown here. I think it looks pretty with the big chunks of vegetables, but my kids would rather have them smaller. Well, not at all, but def smaller.
