There are a number of different ways to prepare bell peppers for stuffing. The most popular way is to roast the peppers before you load them up with the goodies but that’s an extra step we’re going to skip this time around (for the sake of simplicity). If you prefer the flavor of a stuffed bell pepper that’s been pre-roasted, do your thing and roast for 20 minutes before you stuff.
The filling is delicious as is but if you want to make really good use of that cashew chipotle crema, mix 1/4 cup of it into the filling before stuffing the peppers. You could also mix in a little sour cream if you want a filling that’s creamier than how it’s written below.
