Strawberry Tofu Chop

If you are not a Gorgonzola fan, you can use goat cheese or feta here with success — or pivot completely to more of a Green Goddess from the archives.
My kids won’t really go for this, so I double the tofu and give them that with an á la carte plate of fruits and veggies. I also sub in a bag of TJ’s Cruciferous Crunch (go through and de-rib the gnarly pieces!) for the cabbage and arugula.
