Strawberry Crumble Bars

Like a strawberry pie and crumble, but in handheld form. These are tender and sweet and nutty and can be swapped with another seasonal fruit should you need it. If strawberries aren’t great near you yet, you could use a good quality jam as the fruit layer and continue with the crumble from there. I have mixed rhubarb and strawberry, you'll just want to land with 1 lb. of fruit, chopped. These would be AMAZING a la mode.
If you are not a coconut oil fan, or don't need these to be dairy-free, sub butter or vegan butter. I have tried these with coconut flour as the GF flour sub here, and you'll want to reduce the yield to 3/4 cup.
