Steak Sammies w/ Whipped Feta & Onions

The recipe is written for a simple pan sear of the steak but know that this works great with leftovers if the steak is sliced super thin. A tri-tip or marinated portobello mushrooms would be great as well! If you’re not a fan of feta, you can swap out this spread with any of your favorites from the archive. The green sauce mixed with a bit of aioli would be great, even the romesco, or hummus. Your call, but you need something creamy.

The most arduous part of this recipe is caramelizing the onions. If you’d prefer a zing instead of sweetness, swap the caramelized onions out for pickled onions.

You get the point – this is endlessly riffable. It’s also packable and crowd pleasing. Use the ciabatta rolls or one loaf, sliced in half, then quartered from there.
