Spring Bowls w/ Walnut Poblano Sauce

I suppose it’s a warm salad? I made the quinoa and sauce in advance to save a step at mealtime. We’re going to roast the potatoes and asparagus together, so we need those potatoes super thin, so they cook at the same time. The sauce is what makes everything special, so don’t skip it.
This could easily take on a protein of choice - chicken, fish, steak, all good and there is enough sauce here to flavor it all.
