Spiced Beef Kebabs w/ Lemony Potatoes & Yogurt Sauce

What a great summer meal and you could easily replace the beef with ground turkey or chicken, should you prefer. Even some heavily spiced cubes of extra firm tofu or salmon!
We did do a carb on carb with the rice and potatoes here, but you could replace the rice with some greens if you aren’t in the business of appealing to particular kids.
I don’t love to call out market specific ingredients but if you are a Trader Joe’s shopper, a dollop of the green zhoug sauce adds a nice kick to the beef mixture! I didn’t put on any chopped pistachios for the photo but a little texture would have been nice!
