Soy & Ginger Grilled Chicken Thighs w/ Cucumber Salad

A great marinade for chicken thighs (or breasts). If you get thicker cuts, pound them to an inch thickness so they cook evenly.
This would make a great meal to feed a crowd with some rice or any sort of cooked asian noodle mixed in with the snap peas and cucumbers to make a heartier side of things. For you cilantro averse folks, chives and mint would be good herbs to substitute.
