Southwest Salmon w/ Elote Salsa

When salmon is in season, a dry rubbed, oven baked slab is always an easy fix for a quick dinner. This recipe has a southwest seasoning blend rubbed onto the flesh of the salmon and the whole thing is topped with an elote inspired salsa. If you’re planning on heating up the grill, the corn is even better if it’s a little charred; otherwise, fresh corn works great too.
You can use the seasoning blend below or your favorite taco seasoning packet to save extra time.
