A meal for New Year’s or to keep in your back pocket for company! The sauce can be fully made in advance, so you aren’t hustling with company. The polenta can also be made ahead, and reheated gently with a bit more liquid.

This can be made in a pressure cooker, but I don’t know them well enough to speak on the exact timing. I know the Instant Pot has a sear option, for both the meat and veggies, then put in all the other ingredients and cook to the tune of 45 minutes and a natural release? You know your equipment better than I do.
