Pictured, you’ll see two filets because one kid won’t eat fish and two filets can feed the three of us no problem. You could also use a different kind of fish, cubes of tofu or chicken, and adjust timing upwards a few minutes to be certain it’s cooked through.
You could serve this over greens or rice. These are the roasting times that worked for myself and my tester, but the thickness of fish filets may vary (I always prefer thick, center-cut ones if possible!) and ovens always cook a bit differently. Just watch your fish and pull it earlier from the tray if needed.
