It’s been a while since we had a risotto!

I like to buy shrimp at Costco because they are large and a great price. It is, arguably, a lot of shrimp, and it freezes well if you don’t want to use it all. I hesitated to add more ingredients to this dish, but I ended up adding some quick sautéed asparagus in after the shrimp.

I took notes on the risotto from Bon Appétit. If you have big eaters or like risotto leftovers, double the recipe below.
