Sausage Stuffed Delicata Squash

I am assuming this to be part of a spread, so half of a squash per person should be enough amongst other things. If you are making this on its own, I’d assume both halves to fill up an adult. I’m using parmesan, as I don’t feel like our holiday table needs more extra melty cheese, but if yours does? Use fontina instead!
If you cannot find delicata squash, a halved acorn squash or honey nut will a little well scooped out of the center post-roast will work!
Want them to be vegetarian? Replace the ground sausage with ⅓ cup cooked farro and ⅓ cup cooked lentils (brown or black or de puy) and add those in after the onions.
