
Salmon Satay w/ Sunbutter Sauce

These were inspired by the brilliant cookbook The Defined Dish, by Alex Snodgrass and the latest issue if Bon Appetit. Alex is a mom who understands weeknight eating in a way we knew our community would enjoy. We tinkered with the recipe, and made salmon feel doable for a weeknight.
The marinade is super versatile and chicken breasts or thighs can be subbed for the salmon. You will need to increase the cooking time to 10-12 minutes.
If you don’t have a grill pan or a grill, these can be done in a 400’ oven for 8ish minutes with a two minute broil at the end.
Ask your butcher to remove the skin from the salmon! It’s tough to do without losing a bunch of the meat.
