Speaking of campground recipes, this one could absolutely go in a foil pack and be warmed over the fire or stove top. Serve it with some crusty bread or pita chips, or put it over a piece of grilled fish or salmon should you be that sort of camper. I used Castelvetrano because I had a jar from Costco, but I think any seedless kind would work great.

If you are in the comfort of your own kitchen, the instructions are below. I loved it served warm but it can sit out for a bit and is still great at room temperature.
