Roasted Shallot Vinaigrette

This goes on everything! We keep this in the fridge for green salads, because it doesn't compete with any other strong flavors. It gets some body from the shallot, but has a bright acid flavor for whatever seasonal salad you're making.

It's a bit annoying to turn on the oven for just one shallot, so I usually do this while something else is already in the oven, or in a toaster oven.
