Roasted carrots are tossed in a nutty, brown butter vinaigrette, along with fresh radishes, greens, and toasted sunflower seeds, which feels like a spring update to a holiday classic. If you are dairy free, you can substitute the brown butter vinaigrette for any citrus-based vinaigrette on SKCC.

The carrots can sit at room temperature until serving. Just add the greens at the end.
