Rice Paper Rolls w/ Peanut Sauce

I have a love/hate with these wraps, friends. I enjoy eating them, but I have such a hard time making them. You must work delicately and with damp hands so you don’t tear the soaked rice paper. So long as you don’t oversoak them, you can work them like a…sensitive tortilla ;) But once they’re rolled with that delicious sauce on the side for dipping, they’re so good!

I didn’t add onion, but some green onion or thinly shaved red onion could work in here too. Should you want them to be more filling, alternative recipes add rice vermicelli to the rolls, or revisit the Pantry Peanut Sauce Bowls.
