Quinoa & Sweet Potato Salad w/ Tahini Turmeric Dressing

I plan for dinner leftovers for lunch the next day, and have since realized that others do that too. For work or home, it’s nice to not have to start again! This salad was a great dinner (we added some grilled chicken) and the leftovers packed well for lunch the next day. For the kids, you could put these bits in a pita, or my people just like a composed plate with all of the pieces instead of mixed together.
