The very best lasagna recipe on this site is the Lasagna Bolognese and it is a time investment for sure. Homemade Bolognese, white sauce, par boiling the noodles even if the package says not to. I warn you in the headnote it takes half a day!

This one is a weeknight option, and a way to use the zucchini that my people typically don’t want. Yes, it’s a lower carb option, but that also means the lasagna doesn’t quite hold shape like it does with the noodles. It bakes up more like a saucy casserole than something that is cut into nice squares. 


Some thin slices of roasted eggplant (stop the cooking before it gets too mushy!) would be nice to swap in for a layer of the zucchini. If you have people who love the noodle layers, I think you could add a layer or two of parboiled lasagna sheets in with the zucchini layer.

An 8” square pan fed four. If you want leftovers or are feeding more people, double everything and assemble in a 9x13” pan.
