Ina Garten introduced me to the concept of an icebox cake, which always just seemed like an elevated version of the Dairy Queen Ice Cream Cakes I’d seen at kids birthday parties in the summer. It is typically made with a chocolate cookie and a cream filling. Here I twisted the recipe to use strawberries, and be a twist on strawberry shortcake. Delicious fresh strawberry compote is layered with classic Nilla wafers and a sweet and tangy cream. It’s everything you like about a strawberry shortcake, without the oven heating up your house.
I made it in a loaf pan and it was plenty to serve 6-8. You could increase ingredients by 50% and make it in a 8-9” springform pan as well.
