
Smoked Paprika Pasta Bake

I was paging through cookbooks, looking to perhaps give away some that I haven’t been using, and this pasta bake by Anne Jones' One: Pot, Plan, Planet caught my eye ([these brownies]/recipes/dairy-free-chocolate-almond-butter-brownies) did too!). It has a summery element to it, and I’m always looking for some hands off meals when people come over or we may be out later.
We tried it with a brown rice pasta, which doesn’t absorb liquid the way that wheat-based pastas do, so I reduced the amount of pasta to half a pound and added 1 lb. of browned sausage. It fed all four of us plus leftovers. It would also be very flavorful as a vegetarian dish, as written!
I used a slightly smaller dish because I wanted things to be a bit deeper, but I wrote in a large pan as I figure it’s what most people have. The pasta is forgiving; just assume you want the water about 80% of the way up the noodle line.
