My kids don’t love fish, but I thought a more familiar and beloved format may help. Burger buns would be fine, but my family loves Cristal bread and it’s easy to find at our Sprouts grocery store.

I suggest using a food processor to get a burger-like texture for these burgers. If you have a meat grinder attachment to a Kitchen Aid mixer, that would work great as well. You can certainly chop everything by hand, just be sure your fish is frozen or super cold and the knife is sharp for easier chopping.

Lastly, if you stock Bachan’s Japanese Barbecue Sauce, that can be used in place of both the soy sauce and sugar in the recipe.
