Roasted Cauliflower Pasta w/ Winter Pesto

We’re using the Winter Pesto to make quick work of a weeknight pasta (I am including it within the recipe here too so you don’t have to click back and forth!). If you make the pesto ahead of time, this can come together quite quickly with most of the process being hands off.

This is vegetarian as is, but some Italian chicken sausage would be great in here too. I would press it out of the casing, brown it in a bit of oil and toss it in when you combine the noodles, pesto and cauliflower.
