Road Trip Chicken Salad

This is a pretty classic chicken salad, but I use Vegenaise because I figured it would be sitting in a cooler for a bit, and mayo spoils more easily if not refrigerated. If you’ll be enjoying it at home, mayo is great!
I don’t like to call for such a niche ingredient, but if you have a jar of peperoncinos, replace the lemon juice with the liquid from those!
