Peppermint Chocolate Ice Cream Pie

For my friends who are looking for a crowd favorite, with more assembly than actual cooking!

If you cannot find peppermint ice cream ( I found some by Alden’s and McConnell’s brands), a mint chip works great! I found peppermint cookies at Sprouts, Trader Joe's has Jojo’s and Oreo also makes a mint version that will work great. If you want to recreate this for a birthday or don’t love peppermint as much as we do, just swap in plain sandwich cookies and whatever your favorite ice cream flavor is.

A springform pan makes it easy to remove and present, but a pie pan works great as well!

The cake can be made with everything besides the whipping cream a few days in advance. I garnished with the whipping cream and cookies just before serving and popped it in the freezer before dinner and the whipping cream held up fine.
