Greens w/ Date Vinaigrette

I have one kid that will eat most salads if they have croutons on them, another that loves cucumbers, no vinaigrette, only Caesar. Salads are tricky here. Then a girlfriend told me about this dressing from a restaurant called Bell’s up in Los Alamos. I am always in need of new dressings, so I tried to riff it after she asked them what was in it. My whole family loved it!

I would consider this a side salad, but keep it in your back pocket for pizza nights and bbq’s this summer as a perfect side dish.
