Gingery Pistachio Carrot Cake

My friend Aran has a residency with America's Test Kitchen this year, and I ripped out this carrot snacking cake of hers in last month's issue of the magazine. While I do love a cake with coconut, raisins, pineapple etc., I appreciated that this one is simplified. Yes, I did need to grind some pistachios and grate fresh ginger, but otherwise it's to the point. Those steps are also unique in separating it from other carrot cake recipes. It's less a birthday party cake, and more something to have around for snacking. I made the frosting, but I think a piece without it and a dollop of greek yogurt is a suitable breakfast.
