Fennel Apple Salad w/ Walnut Vinaigrette

If you have your main dish handled (maybe a roast chicken or some pan seared salmon), this is the perfect side. It’s light and crunchy, but relies more on the fennel and apple than greens, so it feels more special. If this is going to be more of a main, add another fennel bulb, apple and handful of greens. Hate to recommend a special tool, but a mandolin makes this salad feel professional! It looks so pretty when everything is shaved equally and evenly. This one is my favorite (and I cannot believe how expensive they’ve gotten but here we are, oy).

This vinaigrette is used in the Strawberry and Asparagus Salad, and I think it works great here. I keep the walnuts chunky so it’s textured and doesn’t get lost with the crunchy produce.
