This eggplant shawarma is great as a quick weeknight dinner when you want to get something healthy on the table fast. The labneh and hummus do add a bit of protein but if you think you’ll want a little more, opt for chicken or chickpeas. If adding protein to this recipe, consider eliminating one eggplant, and replace it with about 1 lb. of chicken pieces or one can of drained chickpeas. You’re aiming for about 2 pounds total.
