
Citrus Breakfast Cake w/ Citrus Curd

A one-bowl, not-too-sweet cake with a mixed citrus curd. The cake is simple, and the curd makes it special. If you want to skip the curd step, I serve this to the kids with plain yogurt and it still feels like a treat. If you want this to be more of a dessert, double the sugar in the cake.
This makes a modest amount of curd, just enough for serving with the cake. Double it if you want extra to swipe on waffles or to stir into plain yogurt.
If you do NOT need it to be gluten-free, you can substitute 1 1/2 cups of all-purpose flour and add an extra tablespoon of oil.
