
Cherry Almond Crumb Bars

This recipe comes together quickly but does require an extra step to cook the filling. Although you could throw some fresh cherries, sugar, and starch together and call it a day, cooking the cherries separately results in perfectly jammy cherry filling each time.
If you prefer a better ratio of crumb to filling, double the crumb recipe below but know the bars (or pie) may need to spend a bit longer in the oven. If doubling, press half the crumb into the pan then top with the other half.
If you’re not a fan of cherries, substitute your favorite frozen fruit (peaches, raspberries, etc.).
You can reduce the sugar in the filling to 1/2 cup if you prefer a filling that’s more tart. Potato starch, arrowroot powder or corn starch can be used as the starch in equal measure.
