Caramelized Carrot Salad

Serve this warm, room temperature, or repurpose it for lunch the next day. This carrot salad is good all of the ways.

We love the sweet and spicy pecans at Trader Joes because they aren’t overly candied. A toasted pecan will be great as well! I didn’t add cheese because it has some salty richness from the bacon, but a goat cheese or something dry like manchego or parm would be great too.
