
Butternut & Chickpea Stew w/ Spicy Peanuts

If you’d prefer to not have to break down a butternut squash (which is probably one of my least favorite parts) get yourself some packaged butternut squash chunks. You’ll need about 1 1/2 pounds.
When I’m in a time crunch, I throw everything together in an Instant Pot and set it to cook on the meat/stew setting for 30 minutes. Not the ideal cooking method but it works when you need to get dinner on the table, fast.
If this stew isn’t hearty enough on its own (or if you want to stretch it), you can serve it with your favorite grain. I prefer tri-colored quinoa but kamut and barley are lovely, too.
