Beet Burgers

These are a dinner-to-lunch dream! I got six bun-sized patties, so we had two the next day to throw on top of a salad or wrap into a tortilla.

I buy the pre-cooked beets at Trader Joes or Sprouts in the fridge section to make quick work of these burgers. They have a great texture and flavor and would be worth doubling if you like to have extras in the fridge or freezer.
