My daughter loves all bread products, and it's a bit of a struggle to get her to eat meals. After school time is just a ravage through the snack bin, but if I plan 15 minutes ahead, I can have these out for the kids. I mention the kids, but these are honestly a perfect party appetizer with some guac and sour cream on the side.
Both the mini flour tortillas from Trader Joe's, or corn tortillas work well here! They need to be the thin, pliable corn, NOT super thick, stone ground kinds. A standard corn tortilla folded doesn't quite qualify as mini, but you could still use this batch technique. I tried taking a large mouth water glass (or biscuit cutter), and cutting a smaller circle from the circle. Think something about 4" across, then folded. There will be some tortilla waste here, but I chopped ours up, baked them with oil and salt, and ended up with little chippy croutons for taco salad the next day.
