Snap Pea Chicken Salad

A restaurant near us that has “chicken salad” on the menu that is nothing like what you would assume (something shreddy with mayo holding it all together). It is fresh shredded, roasted chicken, a bunch of peas, herbs, walnuts and arugula. It is so filling, fresh and green!
My kids don’t go big for an entree salad, but I can portion some of the salad and chicken separately with some warm sourdough and we can make this work.
