You can find sashimi-grade ahi at reputable grocers or fish-mongers as well as certain Costco stores. I find out the delivery date and plan to make this that same day. Fish is the quickest deteriorating protein, so the sooner you use it, the better. You could use salmon in the summer months if you have a super fresh source for sashimi-grade. Either way, buy it and make this bowl within 24-hrs if you can. Seared ahi or any other fish can stand in here too.
